Kale and Goji Berry Superfood Salad

Not only is the raw salad super tasty (my wife, who is no fan of kale, loves it), it’s so packed with nutritional super foods that you feel great eating it.

Ingredients

6 cups destemmed and chopped kale leaves loosely packed

1/2 cups raw walnut halves

1/4 cup quartered and thinly sliced red onion

1 tbsp. sunflower seeds

1 tbsp. slivered almonds*

1 tsp. hemp hearts*

1/2 tsp flax seeds*

1/4 cup extra virgin olive oil

1/8 cup apple cider vinegar

1 tbsp. raw agave nectar

1 smallish clove finely minced garlic

pinch of salt

The total yield for the dressing should be about 1/3 cup.

Directions

Make dressing: add all ingredients together in a small bowl or measuring cup and whisk briskly until the dressing becomes somewhat opaque.

Add onions and toss until everything is well-coated with the dressing. Add all remaining ingredients and toss again.

It’s ready to serve! However, this salad keeps very well and tastes even better on day two and three!
